Baked Oatmeal


Ingredients
  • 2 cups uncooked quick-cooking oats
  • 1/2 cup packed brown sugar
  • 1/3 cup raisins
  • 1 tablespoon chopped walnuts
  • 1 teaspoon baking powder
  • 1 1/2 cups fat-free milk 
  • 1/2 cup applesauce 
  • 2 tablespoons butter, melted 
  • large egg, beaten 
  • Cooking spray 

  • Preparation
  • Preheat oven to 375°. Combine the first 5 ingredients in a medium bowl. Combine the milk, applesauce, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray. Bake at 375° for 20 minutes. Serve warm.

Oatmeal Cookies

Ingredients
2 eggs
1 cup of Brown sugar
1/2 cup of granulated sugar
2/3 cup vegetable oil (a friend of mine used olive oil once and it turned out alright)
1 teaspoon baking soda
1 tablespoon of hot water
1 1/2 cups all-purpose flour
1 teaspoon salt
1 1/2 cups quick rolled oats
1 teaspoon vanilla extract
OPTIONAL: 1/2 cup chocolate chips (you can substitute chocolate chips with dried fruit like raisins, cranberries, blueberies, etc.)
  • Preheat oven to 375 degrees F.
  • Beat the two eggs until frothy in a mixing bowl.
  • Mix in both the brown sugar and the granulated sugar. Add the cooking oil and vanilla.
  • Dissolve the baking soda in the hot water and then add it in.
  • Add oats, flour, and salt. Mix thoroughly. At this point, feel free to add in your dried fruit/chocolate  chips.
  • Bake 8-10 minutes

Apple Pie Dip & Cinnamon-Sugar Tortilla Chips (Replace your usual chips and dip)
Ingredients:
2 cups peeled, cored, and diced apple
2 tbsp fresh lemon/calamansi juice
3 tbsp brown sugar
¼ tsp cinnamon
1 tsp cornstarch dissolved in 1 tsp water
For the chips
5 (6-inch) wheat tortillas
2 tablespoons butter, melted
1/2 teaspoon cinnamon
1 1/2 tablespoons sugar
Directions:
  • You can either cook this on the stove-top or the microwave.
  • Combine all the dip ingredients in a small pan/ microwaveable bowl except the cornstarch-water mixture.
  • Heat for a few minutes until it’s boiling and has extracted juice from the apple.
  • Add cornstarch-water mixture to the “sauce”
  • Put back in the microwave/stove top until boiling and the sauce has thickened.
  • Set aside. You can serve this warm or chilled. It doesn’t matter. It will taste delicious.
  • Cut tortillas into desired size. {wedges}
  • Put in a slightly greased baking pan.
  • Brush the tortillas with butter.
  • Sprinkle with cinnamon and sugar, and bake at 210º C until golden brown, about 5-8 minutes.
  • Let them cool before serving and serve with the Apple Pie Dip
